This week has been such a repeat of last week it is almost scary!! :)
Last week: Luvy went to Tennessee on Wednesday and came back on Thursday to meet our new niece, Laura.
This week: Luvy and I both went to TN on Wednesday and came back on Thursday for Uncle Frank’s funeral.
Last week: Doctor appointment, picnic lunch at the seminary, Whole Foods, and the grocery store with Luvy on Friday.
This week: Doctor appointment, picnic lunch at the seminary, Whole Foods, and the grocery today!!
How odd! We need some diversity in our schedule! :)
After all of our running today, we came home to a Luvy made meal! Luvy is famous for his crockpot skills in our house. Nothing was better today than soup beans, cornbread, and a simple salad!
We went to Passafiume’s today for veggies and look at these beauties I picked up!
I love mushrooms. They were the star of our salad tonight.
Luvy’s Soup Beans
- 1 bag of mixed beans usually pinto and great northern white beans (or just pinto beans in our case)
- 1 onion chopped (I used 1 leek)
- garlic powder, salt, pepper to taste
- 1 tsp of Better than Bouillon is also great!
Soak beans over night.
The next morning, drain beans and chop onion or leek. Add all ingredients in a crockpot and cover with water. You want about 2-3 inches of water over the beans.
Stir after 2 hours if possible and add more water if necessary.
Serve with crumbled corn bread!
I wasn’t crazy about our corn bread tonight, so when I master that recipe I’ll post it for ya!
Luvy is about home with a movie!! Comfort food for dinner and now a comfy cozy night on the couch!
It feels good to be home and to get back to “normal” before Christmas is here.
I’ll leave you with this tonight:
It is a rose from Uncle Frank’s service. Isn’t it beautiful???
What is your favorite comfort food this time of year?

Vegetable Soup is wonderful on a cold day. Then that night hot chocolate!!!
