My house smells like a BIG peach.
I don’t know what we were thinking picking 50lbs of peaches!!
So far, I have frozen some and made 3 peach cobblers!!
I tried to “healthify” these cobblers the best I could. ;)
“Healthy” Peach Cobbler
- 1/2 cup Whole Wheat Pastry Flour
- 1/2 cup Unbleached All-Purpose flour
- 1/4 cup agave nectar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup of milk (I have used unsweetened almond and light plain soy)
- 3 cups sliced fresh or frozen peaches with juice
Preheat oven to 350. Slice and peel (if you so desire) your peaches. Combine flour, agave, baking powder, and salt in a bowl. Stir in milk. Pour into a greased medium sized glass dish. Bake for 30-35 minutes.
Enjoy with some vanilla ice cream!! I love my coconut milk ice cream!!

Just a few times a year a get seriously bad headaches. Like… turn off all the lights, make no noise, and cry myself to sleep kind of headache.
I know they are coming on when my neck starts to get stiff and my vision starts getting blurry.
It’s that time of year again. :( Right after work, I went to the chiropractor and got adjusted.
I am now on the couch with my bed buddy wrapped around my neck wishing I lived closer to a Whole Foods or someplace where I could get some Tiger Balm!
Even though I’m not supposed to take ANY medications, I slipped some ibuprofen and now I’m going to take a steamy shower and call it a night!
I might end up feeling well enough for some peach cobbler later….
