We love pizza. Luvy REALLY loves pizza.
After his comprehensive evaluations were over, he only wanted one thing. Pizza. I have a hard time eating pizza because most places don’t have a dairy-free or gluten-free option.
After all of Luvy’s studying and hard work. I wasn’t about to not get him that pizza. After some researching on my beloved urbanspoon, I found Uncle Maddio’s pizza!

I’m so glad that I found this place. It is close to the seminary where Luvy goes to school, and it is in an area that we really like in Louisville called the Highlands.
Uncle Maddio’s wants to do for pizza what Chipotle did for Tex-Mex. Everything is organic and antibiotic-free, which I was very excited about.

They also offer gluten-free pizza AND Daiya vegan cheese!! Plus, everything is also soy free (unless you order tofu!).
I was very impressed with their selection. Plus, they have a separate sauce they use for the gluten-free pizza so that there isn’t any cross-contamination. Someone with celiac disease could feel comfortable eating here.
Even if you don’t like pizza, they have great salads! If you don’t want a salad or pizza go here just to use their cool drink machine!

I was amazed by this machine!
I ordered the gluten-free pizza with Daiya cheese, artichokes, portobello mushrooms, and sundried tomatoes. Holy YUM!

Luvy got the whole wheat pizza with mozzarella cheese, jerk chicken, artichokes, and sundried tomatoes.

We even had some to bring home.

We loved Uncle Maddio’s Pizza! We will definitely be back! Fresh pizza with wholesome ingredients in 6 minutes… yes please!
This was the perfect celebration lunch for Luvy!

Do you all like pizza?
What is your favorite healthy “fast food” place??

I have yet to taste a gluten free pizza, but that one looks amazing. Those coke machines are so cool I am dying to go somewhere that has one.
it was my first time having gf pizza. it was good!
Who doesn’t love pizza?
Looks like such a great place!
I don’t anyone who doesn’t like pizza!
mmm both cody and i LOVE pizza. i think cody could have pizza every single night of his life and be a happy man.
so could Luvy!
Chipotle and Subway are two of my favorite healthy fast food restaurants! Also, I just realized that we live close enough for a potential blogger meet-up someday. Kentucky is not too far from Indiana
.
We should do it!
Definitely!
I absolutely love pizza! We have a restaurant called Dewey’s pizza in my city and it is amazing! The veggie pizza is packed with fresh toppings and their calzones are awesome as well!
That sounds awesome!
I love pizza with chicken on it, but Kenny loves the traditional pepperoni. We usually come to some kind of conclusion (I think I mostly win, haha!) That place looks terrific!
I usually win too!
That or we split the pizza and do a his and her half!
Wow. I wish I had something like that out here. I have been vegan for so long that I am used to pizza without cheese, but now since daiya I sometimes put it on myself. We also have one vegan pizzeria in the Seattle area.
I totally laughed about the soda machine. So far I have ran into one of those in the Seattle area and if you think adults are entertained by it imagine standing behind a kid.
I didn’t realize you were in the Seattle area!!! WE LOVE Seattle!
Favorite “fast food” place is Rumbi Island Grill- it’s sort of fast food, you have to go inside and you order at the counter and then they bring you your food. They have the best bowls- you can get chicken, brown rice and steamed veggies and I always get salsa on the side- it’s pretty darn clean for eating out!
That sounds like the best place!!
Oh my goodness I want one of those places near me!! I would probably be there all the time haha. And my fiance would love it since they have Daiya cheese…he’s lactose intolerant and therefore doesn’t get to eat pizza that often.
Daiya always saves the day!! Come visit me anytime and we can go get pizza!
This place sounds awesome! I love the different options they offer. Totally my kind of place
Your pizza sounds amazing too.
babe! your pizza sounds incredible! pizza is something I have never “loved”. you know how it is a common thing to order when you are young for everyone at your birthday parties? yeah, not me. We always had like homemade mac and cheese or something like homemade hamburgers grilled in my backyard, but I love making pizzas at home on tortillas! I think I will do it soon and use the toppings you ordered!
