WIAW #9

Happy What I Ate Wednesday!  Being off on Monday for my birthday is helping this week fly by!

This month, Jenn is wanting us to talk about food and fitness.  I love both, so let’s go!!   I’m going to detail some* of yesterday’s eats and fitness.

Breakfast was a usual.  Blueberry and strawberry buckwheat bake.

My morning flew by, and 3 hours later it was time for lunch.  Leftovers are all the rage here for lunch.

I had leftover broccoli dal for lunch.  Hit the spot!

My snack was a couple of figs stuffed with almond butter.  I am addicted!

I didn’t have a bit snack, because we were eating dinner early.

For dinner, we had enchiladas.  This may be the BEST recipe I have ever created.

Don’t worry I will share it asap.  It was Luvy approved for sure.  

After dinner, my friend Laura and I went to get froyo.  She is leaving for London this week, and I am going to miss her!!

Those bowls for froyo are HUUUUGE!  I’m so glad that we got to chat for a bit!

So, you might be wondering… when are we going to talk about fitness.  It doesn’t look like to did anything today, and you are right!

I want to talk to you about REST.  That is such an important part of fitness that seems to be overlooked.  I know when I was training for my half marathon or in the height of my fitness days, I hated rest days.  I would consider doing a 20 min video “rest”.

Our bodies need rest days to recharge and get stronger, especially after a hard workout.  

How do you feel about rest days?  Do you take them?

What is your favorite way to eat a fig?

WIAW #8

Can you believe it is Wednesday already??  You know what that means!!  It’s time for What I Ate Wednesday!

This past weekend, I made a TON of food for daddy to come up.  My fridge is still massively full of food.

It was so hot outside that I didn’t want us to heat up the house, plus I didn’t want to spend all my time in the kitchen with him here!

Also, my dad likes vegetarian food, so it made it very easy to feed him.  Plus, when he comes up, he always brings farm fresh veggies and meats from local farms and his farm.  Luvy loves that!

So how do you feed family or guests without a ton of cooking?

Breakfast:

Mostly for breakfast we would have yogurt, oats, or some cereal.  On Saturday morning, we made a “big breakfast”.

Daddy and Luvy made some sausage from a local farmer in Tennessee that my daddy is friends with.  They both LOVE this sausage.  Me, not so much.  :)

I whipped up Purely Elizabeth’s gluten free pancakes while Luvy made some eggs for us.

Lunch:

For lunches, we mostly ate leftovers and cold salads.

My Confetti Quinoa Salad was a huge hit, and so was Emily’s Lentil and Green Bean Salad!

The guys also made turkey sandwiches for lunch.  Devoured with a TON of daddy’s homemade salsa.  We have been out for a few weeks now, and Luvy was lost without it.  Store bought just doesn’t cut it after you have had my daddy’s salsa!

Dinner:

Dinner was super simple compared to some of the recipes I try!  I made Happy Herbivore’s Mexican Cabbage.

Luvy and I have made this several times and we can’t get enough!

For our second night’s dinner, we ate really early because daddy doesn’t usually eat dinner.  Since he was up, Luvy and him decided to grill up some of daddy’s beef.  I was so glad that Luvy finally had someone to eat beef with!  ha!

We griled corn from Daddy’s garden, vegetables, tilapia for me, and beef skewers with veggies for the guys.

I made an amazing Tropical Tilapia salad!  I’ll have to share my recipe with you guys!

I hope y’alls weekend was as great as ours.  It was so fun hanging out with my dad and having him around!!

WIAW #7 On The Run

So, obviously I can’t count… last week I said it was #5, but it was actually #6.  This is why I don’t have a degree in mathematics, and I probably shouldn’t be homeschooling my future children.

Happy What I Ate Wednesday!!  

You all might be thinking.. you have been posting in the mornings now, but 10am is a little late for you..  Want to know why that is??  I slept in, and I don’t feel guilty.  It was glorious!

So, back to the eats…

I had these wonderful muffins for breakfast along with a smoothie for breakfast.

And yes, I’m a bad blogger who forgot to take a picture.  Truth is, I was running late, and I was slurping down my smoothie and cramming down my muffins while running out the door!

Recipe coming for the muffins… I promise!

Lunch was also on the run because Luvy and I had an appointment.  We had to leave by 12:45.  I threw together a quick stir fry and ran out the door.

I try not to eat much soy, but I have been enjoying tofu once every couple of weeks.

Snacks included an apple with a boatload of peanut butter, and Stuft Mama’s Pumpkin Protein Dough.  I also covered that in peanut butter.  I was craving peanut butter for some reason today too!  

PLUS, what was leftover from my smoothie that morning.  I went a bit overboard with my smoothie and it wouldn’t all fit into my cup!

I have some serious sinus drainage going on (TMI??), and so I have no appetite.  Luvy and I were going to grill out fish, but I wasn’t stomaching that.  So, I dug out my frozen split pea soup out of the freezer, and we had soup and sandwiches.  :)

I’m so glad that he doesn’t care what we eat!  I rolled with a sunflower butter sammy.  

I didn’t have a snack last night, because we went to bed early.  (and yes, I still slept in!)

Make sure you thank a soldier for his or her service today.  We wouldn’t have our freedom if it wasn’t for their sacrifice!  

I want to thank our family’s very own soldier, Matt, for serving our country!

Tonight we have a party with our college group!  :)  Right now, I am going back to the living room to watch my boyfriend, Novak Djokovic, play some tennis.  Yes, Luvy knows about him… he introduced us!  ;)
