Protein Buckwheat Muffins

Happy Thursday friends!

This morning I have a doctor’s appointment, so I thought instead of you all listening to me ramble and whine about my appointment this morning I would finally share a recipe that I have been promising.

My favorite meal of the day is breakfast.  I LOVE breakfast food.  One of my current obsessions is buckwheat muffins.  They are super quick, filling, and have protein to keep me full.

A while back, I did a guest post for my sweet friend Ashley on my Protein Blackberry and Blueberry Buckwheat Muffins

Since I never posted it for you guys, I thought I would today.

Protein Blackberry and Blueberry Muffin

  • 3 Tbsp buckwheat flour
  • 1/2 scoop protein powder (I used Sunwarrior)
  • 1 Tbsp chia seeds (can sub 1 egg)
  • 1/4 tsp baking powder
  • 1/4 cup applesauce
  • 1/4 cup milk (I used hemp milk)
  • 1/2 cup blueberries and/or blackberries (I used frozen)

Mix flour, protein powder, chia seeds, and baking powder in bowl.  Add in applesauce and milk.  You may need more milk if the mix is too dry.  This depends on your protein powder.  Plus, the chia seeds will absorb a lot of the milk.  Add in berries and microwave on high for 3 1/2 minutes.

Top with nut butter, fresh berries, and maple syrup. I recommend lots of nut butter!!  :)

 I’m not always in the mood for blueberry and blackberries, plus there is a ton of fresh fruit available right now.  So, I also thought I might share how to change it up a bit!

A favorite of mine is to chop up 1/2 of a peach and put it in instead of the berries.  When you do more whole fresh fruit, there is naturally more moisture.  You may not need as much milk or applesauce in that case.

The most recent muffin I made was frozen blueberries in the mix then topped with fresh strawberries and blueberries.  The sky is the limit with the combinations!

The small weird brown blob is a new to me butter!  I didn’t want to put too much at first in case I didn’t like it.  Per usual… I LOVED IT!

Feel free to experiment with different fruits!  Or even switch out the applesauce for another puree, maybe pumpkin or yogurt??

Tropical Tilapia and a Challenge

Hey guys!  

This meal has been haunting my mind in a good way since I made it!  I love fresh, light meals in the summer, and this one has been my absolute favorite!

Since dad and Luvy were grilling steak kabobs, I didn’t really know what I wanted.  

I knew I wanted a salad/rice bowl.  I wanted lots of veggies.

I knew I didn’t want my typical rice and beans.  Plus, I wanted to use my Trader Joe’s Pineapple Salsa.

Then it hit me… a tropical salad/rice bowl with tilapia.

Tropical Tilapia Salad

  • grilled tilapia
  • salad greens or spinach (I used spinach)
  • cooked rice
  • grilled or fresh veggies and pineapple (I didn’t have any pineapple.  BIG bummer!)
  • salsa (I used TJ’s Pinapple Salsa)
  • avocado (optional)—but highly recommended!

Put all your veggies on the grill first.  They will take a bit longer than the fish.

Grill your fish in the last 5-6 minutes.  You don’t want your fish to be done before your veggies (or steak kabobs!).

Luvy is our grill master, and he always grills my fish perfectly!

For the salad, put down a layer of greens and add your rice.  Top with grilled veggies (and pineapple) and fish.

Top it off with salsa and avocado.  YUM!!

I forgot to add my avocado before I took the picture.  Whoopsy… bad blogger.  This was so good and I was so excited that I’m surprised I took any pics!  

I have to figure out how to make pineapple salsa, because I didn’t notice it until after I had eaten it that this salsa is made in a plant with wheat.  So, it probably isn’t gluten free… whoops!  I got a bit of a tummy ache after, but I don’t know if it was just mental.  Do you every do that??

Okay, so I have a challenge for us.  It has been really hot, and I haven’t been drinking enough water.  I have noticed that I have been swelling, and my digestion has not been very good. 

SO, I am challenging all of us to drink 2 large glasses of water every morning before we eat or drink anything else.  This will help flush out our system and get everything moving.  If you want to add some lemon to this, even better!

Blueberry Buckwheat Yogurt Muffins

Happy Friday!  :)  This week has flown by since Wednesday was a holiday!

I have been excited all week to share these with you guys!

Muffins are such an easy breakfast, because you can grab them and go!  However, they can get really unhealthy very quick.  These muffins are filling and moist, without all kinds of creepy ingredients!

All around the blog world, I have been seeing breads or muffins made with greek yogurt.  This made me extremely jealous!  :)  Imagine my excitement when SoDelicious let me know about their Coconut Milk Greek Style Yogurt!!

These are also very low in sugar.  I don’t like an extremely sweet breakfast muffin.  If you do, you will want to add more sweetener.  Luvy and I thought these were perfectly sweet!

Blueberry Buckwheat Yogurt Muffins

  • 1.5 cups buckwheat flour**
  • 2 scoops plant based protein powder (I used Sunwarrior)
  • 2 very ripe bananas, mashed
  • 1 SoDelicious Vanilla Coconut Milk Yogurt
  • 2 Tbsp Stevia baking blend (or 1/4 cup agave or sugar)
  • 1tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup + 2 Tbsp milk (I used unsweetened vanilla almond milk)
  • 1/2- 3/4 cup blueberries (I used frozen)

1.  Pre-heat oven to 350.  Mash your banana.  Then, add in yogurt, sugar, and milk.

2. In a separate bowl, add all dry ingredients.

3. Slowly stir wet into dry.  Batter will be thick.  Fold in blueberries.

4. Pour into greased muffin tins.

5. Bake 25-30 minutes.  Check with a toothpick to test to see if they are done.

**I have not tested these with other flours.  Buckwheat absorbs a lot of water and does not act like other flours.  Exchange at your own risk.  :)
