Spring Fever

Today was a beautiful day!!  Too bad I had to work until 7pm.  Bummer.

We all wanted to “be sick” today and play hooky, but we were responsible adults. (Bummer #2)  :)

I think my body knew it was going to be a warm and pretty day today, because for breakfast I didn’t want my typical oats.  In fact, I didn’t want anything hot- I wanted my homemade “yogurt“.  It was bliss.

On my way home from lunch, I kept debating what to make.  (Yes, I’m weird like that)  :)  Luvy wasn’t home for lunch today, so I didn’t have him to help me choose.  A salad sounded so good since it was almost 70 degrees out, but I thought I had better make an egg scramble or something more filling since it had to hold me over until 7:30.

When I got home, the garage door wasn’t budging.  I went inside to find that the power was out!  No egg for me!  A salad it was.

It was exactly what I wanted and what my body needed.  I quickly grabbed all the leftovers and salad stuff out of the fridge– didn’t want to let out all the cold air!

In the mix went: spinach, arugula, celery , mushrooms, carrots, roasted butternut squash, millet, apple, pear, chickpeas, Twin Oaks Tofu, nuts, and granola.  Time to add back in the carrots and see how my belly does!

I’m so ready for spring and summer when I can enjoy more cold and fresh foods.  I’m ready to pick my garden and have all kinds of fruits and veggies in season.

Today gave me spring fever so bad!!  Too bad tomorrow the temperature drops again.  Then again, it is still February!

Luvy and I are a pair today.

Yesterday, I tried running and it was a no go… My knee is hurting pretty bad today.  This may be too much information, but I also have a catch in my tush… is that possible?!?  It was hilarious trying to watch me clean the shower today.

Luvy woke up this morning with a crick in his neck.  He is walking around without moving his head.  It is pretty funny to see.

We are falling apart, but at least we have each other to laugh at!

We had plans to go to Walmart and to the movies today, but that didn’t happen.  We did work on school stuff, got the house cleaned, and made dinner!

Pretty good dinner if I say so myself.  Butternut squash and millet salad with roasted brussels sprouts.

Today, I realized that several people have asked me about commenting on the blog… how to do it… is it secure… why do you need to put in a name and e-mail addy, etc.

Millet and Butternut Squash Salad

This salad was a HUGE hit at Thanksgiving.  I’m thinking about making it again for Christmas!

Plus, it is super easy and healthy- even though it doesn’t taste “healthy”.  :)

Millet and Butternut Squash Salad

  • 1 LARGE butternut squash
  • 1 cup millet
  • cinnamon
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp pure maple syrup
  • 2 Tbsp to 1/4 cup cranberries (depends on how sweet you want it)
  • walnuts and pepitas (raw pumpkin seeds) as garnish

Chop- CAREFULLY- your butternut squash.  You will want them in cubes.  These boogers are difficult to chop and peel so be careful!  Or be like me and get a Luvy to chop it for you!

After they are chopped, drizzle with just a little oil and toss with cinnamon.  Roast them on 425 for 20-25 minutes.  Check 1/2 way through to stir and make sure they are not burning.

Meanwhile, bring 2 cups of water to a boil.  Place your millet in a dry pan and “toast” it.  You will want to stir this continuously to prevent it from burning.  When it starts to pop and brown a little, it is done.  

Add into the 2 cups of water.  Be careful that it doesn’t boil over.  Reduce to low and cover.  Simmer for 20-25 minutes.  Do not lift the lid!  Fluff with fork when finished.

Once millet and butternut squash are both done, combine the two in a large dish.  Add in the craisins and toss to mix.

Next, stir in balsamic vinegar and maple syrup.  You may want to add more of one or the other depending on taste.  I don’t like mine too sweet.  You may also want to add a dash of salt here too.

Once you get it tasting the way you like, top with pepitas and walnuts.  Almonds, pecans, or sunflower seeds would also be lovely!

This dish is a great dish to serve to a large group.  Feel free to half the recipe.  I do all the time!

It is also fantastic cold.  Like when you are sitting in the car for hours due to a wreck and you are starving and the only thing in the cooler is leftovers… just sayin…
