MIMM I’m 27 Today!

Happy Monday!  You know what that means… It’s Marvelous in My Monday with my friend Katie!

Today is extra marvelous, because it is my 27th birthday!!  :)

It doesn’t really feel like my birthday, because I’m usually an all week long celebrater.  Since Luvy is having to spend all his time and effort on getting a part of his dissertation written so he can defend his prospectus, it hasn’t really been a birthday weekend.  BUT that is okay, because I know his hard work will pay off and we will both be better off for it!

Even though he is super busy, he still makes my birthday marvelous.  I woke up to these flowers and his sweet card.

I had to put my contacts in to read the card!  There is nothing I love more than Luvy’s homemade cards.  Hallmark just doesn’t say things like Luvy does!

My birthday has been marvelous already, because this weekend I also got to spend time with my beautiful friend Kelly!

She and I worked on school stuff for a bit then ran around… in the rain! The rain was marvelous, because we haven’t had any in weeks!

We went shopping and we got some marvelous deals at Loft.

A skirt and tank for only $20!  Plus, I had a $15 off card because it is my birthday month!!  Totally marvelous… right??

Then, we went to Rainbow Blossom where they were having a gluten free fair.  Kelly was so awesome to join me, even though she isn’t GF!  Love her!

I tasted one of Delicously Free‘s cupcakes, and fell in LOVE!  Plus they are a local company.  Rose, who owns Deliciously Free, gave me 2 whole cupcakes since it was my birthday!!  Thanks Rose!!

Today, I’m off work for my birthday, which is also MARVELOUS!  So, I have some other fun stuff planned for my birthday.

I have big plans for those cupcakes tonight!!  :)

WIAW #8

Can you believe it is Wednesday already??  You know what that means!!  It’s time for What I Ate Wednesday!

This past weekend, I made a TON of food for daddy to come up.  My fridge is still massively full of food.

It was so hot outside that I didn’t want us to heat up the house, plus I didn’t want to spend all my time in the kitchen with him here!

Also, my dad likes vegetarian food, so it made it very easy to feed him.  Plus, when he comes up, he always brings farm fresh veggies and meats from local farms and his farm.  Luvy loves that!

So how do you feed family or guests without a ton of cooking?

Breakfast:

Mostly for breakfast we would have yogurt, oats, or some cereal.  On Saturday morning, we made a “big breakfast”.

Daddy and Luvy made some sausage from a local farmer in Tennessee that my daddy is friends with.  They both LOVE this sausage.  Me, not so much.  :)

I whipped up Purely Elizabeth’s gluten free pancakes while Luvy made some eggs for us.

Lunch:

For lunches, we mostly ate leftovers and cold salads.

My Confetti Quinoa Salad was a huge hit, and so was Emily’s Lentil and Green Bean Salad!

The guys also made turkey sandwiches for lunch.  Devoured with a TON of daddy’s homemade salsa.  We have been out for a few weeks now, and Luvy was lost without it.  Store bought just doesn’t cut it after you have had my daddy’s salsa!

Dinner:

Dinner was super simple compared to some of the recipes I try!  I made Happy Herbivore’s Mexican Cabbage.

For our second night’s dinner, we ate really early because daddy doesn’t usually eat dinner.  Since he was up, Luvy and him decided to grill up some of daddy’s beef.  I was so glad that Luvy finally had someone to eat beef with!  ha!

We griled corn from Daddy’s garden, vegetables, tilapia for me, and beef skewers with veggies for the guys.

I made an amazing Tropical Tilapia salad!  I’ll have to share my recipe with you guys!

I hope y’alls weekend was as great as ours.  It was so fun hanging out with my dad and having him around!!

I hope you all had a marvelous weekend!  We sure did.  I was so sad to see my dad leave yesterday.

Since our family lives in East Tennessee, we don’t get to see them as much as we would like.  That is why we love when we get visitors so much!!  I enjoyed having family around so much that I didn’t even think about taking many pictures.  Whoops.

Friday was marvelous, because my dad and I relax that morning and then ran errands until around lunchtime.  Luvy joined us for lunch, then dad and I relaxed that afternoon.  I had plans for us to go to Huber’s in Indiana to pick peaches, but it was too hot!

The heat kept us in most of the weekend!

Saturday, we went to our friends’ farm for their farmer’s market.

What was not so marvelous was Sunday came WAY too fast!  Daddy had to go home right after church, and I had to get ready for a full week at work.

Sunday’s are still marvelous, because I get to spend it with these girls for our bookclub.

We also had some MARVELOUS eats this weekend, but I’ll tell you about those later!
