It’s Time!

‘Tis that time of year.  I am sneezing, manly sounding, and now I have the headache.

I only get bad headaches with the weather goes from one extreme to another.  :)  For example, it was only 50° on Saturday and then today it was 82°.  Lovely.  I’m very glad to have the heat back, but my head feel like it is going to explode!!  That also could be from all the studying I have been doing!  ;)

Regardless of the warmer weather, I am definitely in the mood for fall foods.  Soup beans, chili, stews, and comfort foods have been dominating our house.  My favorite fall food, however, is pumpkin!  I love it.  I love pumpkin in just about anything and everything.

I’m working on a new recipe for pumpkin pasta sauce… it’s gonna be good!

My newest creation was a spin off my Almost Grandma’s Banana Bread.  I turned it into Pumpkin Banana Bread!

This is the best pumpkin banana bread I have ever made!

Pumpkin Banana Bread

Wet:

  • 2 bananas, mashed
  • 1/4 cup stevia baking blend (or 1/3 to 1/2 cup brown sugar)
  • 3/4 cup pumpkin
  • 1/4 cup milk (I used unsweetened almond)

Dry:

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1/4- 1/2 cup pecans or walnuts (opt)

Mash bananas.  Add all “wet” ingredients and mix well. ( I know the sugar isn’t wet, but mix it in anyway!)  I just mash my banana up with a fork.  I like the banana to be a little chunky.

Mix all “dry” ingredients and slowly mix into banana mixture.  Put in greased loaf pan or muffin pan.

Bake muffins for 18 minutes.  For a loaf, bake for 45-50 minutes.

Top with peanut butter, honey, and chopped bananas for an almost sinfully good breakfast. :)  Or just grab them on your way out the door on days you are running late…. I wouldn’t know anything about that!  ;)  It would also make a nutritious afternoon snack…. I wouldn’t know anything about that either…

Burns Be Gone

We are at a new coffee shop tonight!!  We are at Java Joe’s.  It is a local spot here.  This is our last night here, and we have been wanting to check this place out all week.

We didn’t spend a ton of time at the beach today.  This morning we headed out for a 4 mile run.  I was feeling extremely lazy this morning, but Luvy motivated me to get up since he was already dressed and ready.  I, again, didn’t regret running!  I felt so much better and more energized after.  We ran at an 8:45 pace, and most of it was in the shade.  I can tell I’m not where I used to be, because I used to run 4 miles so fast and with hills.  It is pretty flat here.  However, I am just super thankful I can run at all without pain.  I’ve been making sure to stretch after every run, and I even brought my foam roller with us!

I wanted something substantial for breakfast after our run.  It wasn’t very hot out, so I decided I would make a hot breakfast rather than cold cereal.  What better than a beach buckwheat muffin??  I brought my buckwheat bake stuff, plus I had leftover pumpkin and apple sauce that needed to be eaten from home so I threw it all together for a great muffin!

Microwave Pumpkin Buckwheat Muffin

  • 1/4 cup pumpkin
  • 2 Tbsp applesauce
  • 3-4 Tbsp almond milk (or milk of choice)
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp carob or cocoa powder (if using cocoa you will need to add some sweetener)
  • 1/4 tsp baking soda
  • 1 Tbsp buckwheat groats
  • 1/4 cup buckwheat flour
  • 1 Tbsp flax with 2 Tbsp warm water (or one egg)

Combine flax with warm water and let sit while you combine all other ingredients in a microwave safe bowl.  If using an egg mix it in with wet ingredients and add in dry ingredients.  Microwave on high for 3 1/2 to 4 minutes.  Check to make sure it is done by pressing on the top.  If it bounces back it is finished.

This makes a HUGE muffin.  Next time, I will make it a bit smaller.  It was almost too much for me to eat.

I topped it with peanut butter, honey, strawberries, and banana.  Luvy had cereal with banana and strawberries.

I bet you all didn’t think you were going to get a new recipe while I was at the beach did ya???  ;)

After breakfast, we hit up the beach!  (I waddled to the beach)  Thanks for all your suggestions on my burns!  Today they look MUCH better, but I still stayed out of the sun for the most part.  Luvy worked very hard to dig and bury my umbrella!

I sat under the umbrella for the most part and covered up with my towel.  PLUS, I had 50 sunscreen on!  I had all my bases covered.

I was a bit sad to not be laying out mainly because it was cold!!  It was 80 degrees, but it was overcast and extremely windy!  Even Luvy thought it was a bit nippy out.

At least my toesies were in the sand though!  

You all like my burn marks!  I think they are hilarious!  I looks like I’m wearing red flip-flops.  Please, no jokes about my platypus feet.  I know they are fat and flat… Luvy calls them my platforms.

It was so chilly out that we decided to forgo going back to the beach after lunch and ride bikes.

We rode for about 30 minutes and realized that it was starting to get dark like a rain was coming.  We turned around and headed back to the condo.  Right when we got back to the condo it started to rain!  I call that perfect timing!!

Tonight, Luvy picked our dinner place and it was another success!!  We went to a favorite of ours- Bonefish Grill.  I know we go there more than anywhere else, but they do a great job!

Luvy got the special- Maryland Softshell Stuffed Crab.  You actually eat the shell of the crab!!!  I love him.  I love that he can try weird things like this.  There is no way I would.  :)

He said it was good though.  It was very rich.

I got the small salmon with steamed broccoli and asparagus.  I also got a side of the Mango Salsa.  I ended up eating it on the salmon- it was great!

The asparagus were huge!!  They were the size of my face!  I all but licked my plate.

Both of us were stuffed after that!  However, not too stuffed to go look at the Vera’s.  They have discontinued some, and it just so happens that I’m on the market for a new purse.  :)  And just so you all know, my birthday is coming up…. in July.  Just sayin’.

Tomorrow is our last day at the beach.  Major sadness.  However, it will more than make up for it when we get to see Luvy’s brother Travis and his wife Stacy!!!  We haven’t seen them since Thanksgiving!

Today, I tried the rotation diet thingy… trying not to eat foods that I ate yesterday is difficult!

Since I didn’t have any grits, I had to eat oats for breakfast.  Well, now I don’t have anything to eat tomorrow for breakfast!!  Stink!  Since I had to throw out my grits that I just bought, Whole Foods said they would replace them!!  This is why I LOVE that place!

Tomorrow, I’m still going to try to avoid wheat and also corn.  I usually have 3 options for breakfast: wheat, grits (corn), or oats.

Anyone have any other suggestions for breakfast???

I want to try buckwheat soon for breakfast, but I made gluten-free cornbread today with buckwheat flour.  Therefore, buckwheat is out for tomorrow.  Does millet make a good breakfast???

Looks like I’ll be eating oats again…  oopsy.

Once I get things in a pattern, it will be a lot easier I’m sure!

I’m not really ready to post the gluten-free cornbread.  I didn’t care for the buckwheat in them.  The buckwheat took over the flavor.  I love the taste of buckwheat, but I want my cornbread to taste like cornbread.  Ya know what I mean???  ;)

I know that y’all have just been dying for that granola recipe that I promised last week.  (If you are like me, you probably forgot all about it).  I was munching on it today, and remembered that I forgot to share.  The recipe that is.  Touch my granola and you might lose a finger.  :)

Crunchy Honey Granola

  • 2 cups of oats
  • 1/4 cup almonds
  • 2 Tbsp sunflower seeds
  • 2 Tbsp pumpkin seeds
  • 2 Tbsp shredded coconut
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup applesauce
  • 1 Tbsp flax
  • 3 Tbsp honey

Mix dry ingredients in a large bowl.

Mix together wet ingredients in a separate bowl.

Combine and mix well.  Bake on 325° for 20 minutes.  Stir after 10 minutes!!
