Happy Monday!

Time for another installment of Marvelous In My Monday with my sweet friend Katie!  :)

 

Instead of rambling for you guys, I’m going to tell you through the letters of my name.  I also got this idea from Katie.  She has all the good ideas…right??

B- Book club.  We had a great book club last night.  I am going to start recapping the book for you guys this week!  So, if you want to buy The List by Marian Jordan do it by this weekend!  :)  You won’t be sorry you did.

R- Random. Luvy and I decided to be spontaneous this weekend and on Saturday, we went to the Farmer’s Market.  That night, we took a nice drive around on backroads.  I love doing that!  It takes me back to my roots.  :)

I- Ice cream.  I have eaten way too much of these guys, but it is oh so good!

T- Time.  I need more of it.  The good news is that I get off for the week at noon Tuesday!   Thank you 4th of July!!

T- Tea.  Iced mint tea.  Perfect for these hot days!

A- Apples.  They have been what I’m craving this weekend.  They are full of water and delicious!

N- Naps.  I never take them, and yesterday I took an hour nap.  Just what I needed!

Y- Yoga.  I am LOVING yoga to stretch out my body.  It makes me feel so much better afterward!

Something Sweet

Hey friends!

So, I was going to share my good news with you guys, but then I realized if I did, you all wouldn’t get it.  See, there have been a few things I have been keeping a secret, so I think it is time I let some of it “out of the bag”.  I quickly realized as I began to type it out that it would take more than one post.  Otherwise, I would put you all in a reading coma!  :)  

With that said, I will be posting Part I of my story tomorrow.  :)  That means…. You all will be getting the dessert recipe today instead!

Speaking of dessert, yesterday I came home to this:

Luvy surprised me with a sweet rose and a Groupon to go get froyo.  He loves me… he REALLY loves me!  AND he knows the keys to my heart!

So about that dessert.  I am salivating just thinking about it. 

I don’t really have a “recipe” per say, but I tried to measure it out the best I could.

Single Serving Brownie

  • a couple tablespoons of buckwheat flour
  • 1/8 tsp of baking powder
  • 1/2 tsp or so of unsweetened cocoa powder
  • 4-5 drops of NuNaturals cocoa bean extract
  • a few chocolate chips… I ended up putting like 8 or 9 b/c most of mine landed in my mouth..

Add in your flour (your choice how much) baking powder, and cocoa powder.  Mix well with some almond milk or water.

Add in stevia and stir well.  Stir in chocolate chips and microwave on high for 30 seconds.  If you do more flour, it may need to go longer.

Try not to stuff your face now.  It is worth the wait.  

Top with peanut butter and strawberries.

Then add on SoDelicous coconut ice cream and Stuft Mama’s frozen frosting.

I die…. I think this has been eaten at my house every night for the past week or so.

WIAW #3

Happy What I Ate Wednesday!

Jenn’s theme this month is sensible snacking.  :)  Just perfect for me, don’t ya think???  Since I confessed I’m a huge snacker yesterday, I thought this was very fitting.

For breakfast, I had pancakes (gasp!) and some Strawberry SoDelicious Greek style coconut milk yogurt.  All topped with blueberries, banana, and granola.  I MUST have my pancakes with some peanut butter and syrup.  I’m almost out of Xagave!!  Nooo…..

So not my typical buckwheat or oats breakfast, but I enjoyed it!  I have been dying to try my Purely Elizabeth pancake mix for months.  Luvy and I haven’t had a good weekend to make pancakes, so I had them without him. Sorry Luvy.  :)

My planned morning snack didn’t happen today, because I was on a business call all.morning.long!  

Needless to say, I was about to eat my arm off at lunch!  I made a quick stir fry that mocked a stir fry I had at a great Mediterranean restaurant here recently.

I had to eat it on the run, because I was going to be late for an appointment.  Let me assure you, it was delicious!

Snack this afternoon was a kiwi in my car driving home and a Simply Bar.  LOVE!

Dinner was vegan meatloaf, roasted carrots, and brussels sprouts.  All with a whole lotta ketchup.  I love ketchup.  :)

My “meatloaf” fell apart because I can never let it set after coming out of the oven.  The minute it comes out, we are digging in!

My snack last night was epic.  AND I forgot to take a picture.  Don’t worry, it will be repeated.  Let me just explain it to make you drool…

I made a homemade gluten-free brownie with chocolate chips in it, topped it with SoDelicious coconut milk ice cream and Stuft Mama’s frozen fudge.

Maybe the best midnight snack ever.  I’m thinking it might happen again tomorrow.  Tonight I have a froyo date!  :)
