I Like it Hot

Just not Thai hot!!!

I LOVE Thai food.  I wish so badly that I could make the Thai Green Curry taste as good at home as it does in the restaurant.  I swear they have some sort of magical fairy dust they use there that makes it so much better than mine.  

A couple weeks ago, I found this really cool Asian grocery store here in Louisville and though I would check it out.  I have been really wanting to try a more authentic green curry paste, so I was on a mission.

The second aisle I went down… green curry paste!  Score.  Plus, it does’t have fish sauce.

I read the directions carefully on the curry tin, and it said to add 1/2 the container for every 2 cups of coconut milk.  I did… and WHOA!

Too hot!  Luvy and I both love hot, but not Thai hot!

The second time around, I think I got pretty close to the real thing!

Thai Green Curry

  • 1 can full fat coconut milk
  • 1/2 cup vegetable broth
  • 1/4 can of Maesri green curry paste
  • 1/3 block of tofu, chopped and browned
  • 2 cups fresh broccoli chopped
  • 1/2 can baby corn
  • 1/2 cup bamboo shoots
  • 1 small red bell pepper, chopped

Bring coconut milk, veg broth, and curry paste to a boil.

Meanwhile brown your tofu in a skillet.  You don’t want it crispy!

Once mixture comes to a boil, add in tofu and the rest of ingredients.  Allow to simmer for 5 minutes or just until veggies are tender but not limp or soft.  Now is the time to test your curry and see if you want it any hotter.  This was plenty hot for us!  It leaves a nice hot afterburn!

Garnish with fresh basil and serve with brown rice or jasmine rice.

Marvelous In My Monday: Siesta Key Edition

Happy Monday!  It certainly doesn’t feel like a typical Monday here since I’m at the beach!

The sweet and beautiful Katie came up with a great idea to make Monday’s more marvelous.  Every Monday, a group of bloggers are going to be sharing anything they think is marvelous so everyone can start their Monday’s on a positive note.  Cool huh??  I know it will help my Monday’s out…

So what has been marvelous for me today??

The beach. I LOVE the beach.

I love just relaxing and not having an agenda. 

I never feel closer to God than when I’m in nature.  When I’m at the beach or when I’m hiking, it seems like God’s presence is more real to me.  Today while I was laying on the beach, I kept seeing people looking at the sun.  At first I was a little freaked out so I didn’t want to look, but it ended up being a beautiful rainbow around the sun.

It was such a beautiful day!  We don’t stay too long in the sun, because a medicine I take makes me very sun sensitive.  I make sure to lather up really well before hitting the beach.  I think I blend in with the sand very well here.  :)  Don’t worry, I won’t scare you all with pictures.  

Tonight, we went to a local Thai place here in Sarasota called Bangkok, and it was AMAZING!

We decided to get to vegetarian and gluten free meals so that we could share.  Luvy is so amazing for eating veggie and GF!  I am so blessed.

We split the Tofu and Veggie Green Curry and the Pineapple Vegetable Fried Rice.  Both were to die for!

They were so accommodating and helpful.  I could eat here again and again!  Everything was so fresh and tasty.  Not oily or overcooked!

Today was an extremely marvelous day… Now I have a hot date with Luvy, popcorn, and the movie Gone.

Girls Night Out

Hey to all the My Food and Fitness Diaries readers!  Thanks for stopping by!  Welcome to my little world of weirdness.  :)

Today, I did a guest post for my sweet friend, Ashley, at her blog My Food and Fitness Diaries.  She is one of my favorite bloggers, so I was so honored she asked me to guest post.

Tonight was girls night!!  My friend Laura and I were supposed to go this weekend to visit her sister who goes to NKU.  However, Maddie ended up coming home, so we had girls night here!

We to eat Thai and Thai Cafe!

Aren’t my dates hot??  ;)  They are single boys…

I go the vegetarian green curry.  It was insanely good!!

We were stuffed after dinner, but we couldn’t pass up on frozen yogurt at Choices.  Laura and I neither one can have milk, but they had a pomegranate dairy free sorbet.

I had never been to a frozen yogurt place, because I just assumed I couldn’t have anything there.  I was very excited!

I didn’t get much, because I was stuffed from Thai.  However, I will definitely be back!

It was the perfect girls night out!
