WIAW: Operation Eat Everything

Since you all liked it so much last week, here is my second WIAW!

So this week my eats have been nothing short of crazy.  Since we are leaving in 2 days (EEEKKK!) for vacation, we are in operation eat everything.  Not to mention that Luvy has not and will not eat at our house for a meal since last night.  So, I’m on my own…

I have been packing his lunches, which look like this:

turkey sandwich, apple, carrot sticks, and water.  He also had my brownies that I made for his class.  :)

Breakfast was a protein buckwheat bake.  Nothing short of perfect.

Lunch was an amazing quinoa and black bean salad.

This beauty is a recipe that I came up with for a guest post for one of my favorite gals.  You all will have to wait on the recipe!  :)

My snacks were quick, but oh so good.  I had a fresh apricot.

Right after work, I had a new to me product.  I had the blueberry So Delicious Greek-style coconut milk yogurt!  It was fantastic.  Full review to come.

I have a lot of things to come…. I’m just full of surprises today!

The best part of the day was dinner.

We had grilled tilapia with Slap Ya Mama seasoning, grilled asparagus, green beans, and corn and quinoa salad.

The meal was great, but the company was even better!  We had over our good friend JoLynn.  She is in town from North Carolina for PhD classes.  She goes to school with Luvy.

God bless them both… I couldn’t do it!  I had a great time chatting girl stuff with her.  I wish she could just come and hang out for a weekend!  (Feel free anytime JoLynn!!!)

My night-time snack was just a couple of handfuls of Love Grown Granola.  We went to bed by 10pm.  We were both so exhausted from a lack of sleep.  Actually, Luvy fell asleep on the couch before then!

I don’t know why, but I ALWAYS have to eat before bed.  I think it is a habit.  Also, I always call it a “midnight snack”, because that is what we called it growing up.

Speaking of growing up… today is my Mom’s birthday!

Happy 39th(ish) (bahahaha) Birthday MOM!

We wish we could be there to celebrate with you!!!

Do you all have to eat a midnight snack?

Anyone else have to eat up everything before they go on vacation?  I can’t stand to throw anything away!

***you all will have to excuse my absence from the blog world for the rest of this week/weekend.  I MUST get us packed for vacation or else we will be going in our birthday suits on the beach.  YiKES!***

Memorial Day

Happy Memorial Day!

First, I want to thank all the men and women out there who selflessly serve our country and protect our freedom.  I can’t thank you enough for your sacrifice and your family’s sacrifice.

We are so blessed to live in America!

Our Memorial Day was not really that exciting.  Well that is unless you call studying from the time you get up until late into the night tonight exciting.

Don’t worry I wasn’t too much fun either.  I was mopping floors, dusting, and preparing the house for vacation.  Plus, I started packing…. so far all I have is the swim suits.  That’s a start!  :)

We sure do know how to party around here!  But hey.. at least we have something to look forward to, right???

This is Luvy’s very last week in class… for forever!  I may do a happy dance.

I know everyone is on edge that is in his PhD group, so I made them some of MamaPea’s brownies to help get through class tomorrow.  I wanted so badly to try one, but since they aren’t gluten-free, I refrained.

We didn’t exactly have an exciting Memorial Day, but life will never be like this again.  I know the time that Luvy is putting into his PhD will serve him (us) very well in the future.  I am so incredible proud of him.

To help Luvy power through this weekend, we have been having some really good eats.

Tilapia, corn on the cob, green beans, and asparagus.  At least we grilled out over the weekend!  :)

Millet, veggies, chickpeas, and Mama Pea’s Mmmm Sauce.  There is one thing that Luvy and I agree on… Mama Pea’s ‘recipeas’!  There is millet hiding under there!

Eggs with spinach, nutritional yeast, and turmeric, carrots, and strawberry and pear spinach salad.  Plus some Rudi’s gluten-free bread for me.  TJ’s whole wheat bread for Luvy.

I may not be able to help Luvy study or sleep, but I can make sure he is well fed!  :)

Scrambled Brains and Split Pea Soup

Does anyone other than me do really stupid things???

I’m sure I’m not the only one that does dumb stuff, but as you all know from my record… I’m a walking disaster.  So, Tuesday I had an appointment that was close to Whole Foods.  Since Luvy and I were right there, we decided to stop by and stock up on fish since we were out.  We bought 3 packs of salmon and 3 of tilapia.  We put it in our cooler bag and headed home with them.

Today, when I went to the grocery store, I realized that our cooler bag was sitting upright in the trunk.  I opened it and found this:

We forgot we had the fish!!!!!!!!   This only happens to us.  How did we forget the fish from WF to home???

Anywho, since we have scrambled brains… I’ll share with you all my split pea soup.  This is one thing that I don’t mess up!

Split Pea Soup

  • 1 bag split peas
  • 1 large onion, chopped
  • 3 med to large carrots, chopped
  • 3 stalks celery, chopped
  • 2 tsp thyme and cumin
  • 1 bay leaf
  • 10 cups water
  • 4 tsp Better than Bouillon or 1 vegetable cube

Chop all ingredients.  Spray a heavy bottomed pot with cooking spray.  Saute onion, carrots, and celery for a few minutes in your pot until they start to soften.

Add all ingredients to pot.  Salt and pepper to taste.  

Bring this to a boil.  Turn heat down and simmer for 1 hour.

This would be perfect for Easter lunch!
