Protein Buckwheat Muffins

This morning I have a doctor’s appointment, so I thought instead of you all listening to me ramble and whine about my appointment this morning I would finally share a recipe that I have been promising.

My favorite meal of the day is breakfast.  I LOVE breakfast food.  One of my current obsessions is buckwheat muffins.  They are super quick, filling, and have protein to keep me full.

Since I never posted it for you guys, I thought I would today.

Protein Blackberry and Blueberry Muffin

  • 3 Tbsp buckwheat flour
  • 1/2 scoop protein powder (I used Sunwarrior)
  • 1 Tbsp chia seeds (can sub 1 egg)
  • 1/4 tsp baking powder
  • 1/4 cup applesauce
  • 1/4 cup milk (I used hemp milk)
  • 1/2 cup blueberries and/or blackberries (I used frozen)

Mix flour, protein powder, chia seeds, and baking powder in bowl.  Add in applesauce and milk.  You may need more milk if the mix is too dry.  This depends on your protein powder.  Plus, the chia seeds will absorb a lot of the milk.  Add in berries and microwave on high for 3 1/2 minutes.

Top with nut butter, fresh berries, and maple syrup. I recommend lots of nut butter!!  :)

 I’m not always in the mood for blueberry and blackberries, plus there is a ton of fresh fruit available right now.  So, I also thought I might share how to change it up a bit!

A favorite of mine is to chop up 1/2 of a peach and put it in instead of the berries.  When you do more whole fresh fruit, there is naturally more moisture.  You may not need as much milk or applesauce in that case.

The most recent muffin I made was frozen blueberries in the mix then topped with fresh strawberries and blueberries.  The sky is the limit with the combinations!

The small weird brown blob is a new to me butter!  I didn’t want to put too much at first in case I didn’t like it.  Per usual… I LOVED IT!

Feel free to experiment with different fruits!  Or even switch out the applesauce for another puree, maybe pumpkin or yogurt??

Blueberry Buckwheat Yogurt Muffins

Happy Friday!  :)  This week has flown by since Wednesday was a holiday!

I have been excited all week to share these with you guys!

Muffins are such an easy breakfast, because you can grab them and go!  However, they can get really unhealthy very quick.  These muffins are filling and moist, without all kinds of creepy ingredients!

All around the blog world, I have been seeing breads or muffins made with greek yogurt.  This made me extremely jealous!  :)  Imagine my excitement when SoDelicious let me know about their Coconut Milk Greek Style Yogurt!!

These are also very low in sugar.  I don’t like an extremely sweet breakfast muffin.  If you do, you will want to add more sweetener.  Luvy and I thought these were perfectly sweet!

Blueberry Buckwheat Yogurt Muffins

  • 1.5 cups buckwheat flour**
  • 2 scoops plant based protein powder (I used Sunwarrior)
  • 2 very ripe bananas, mashed
  • 1 SoDelicious Vanilla Coconut Milk Yogurt
  • 2 Tbsp Stevia baking blend (or 1/4 cup agave or sugar)
  • 1tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 cup + 2 Tbsp milk (I used unsweetened vanilla almond milk)
  • 1/2- 3/4 cup blueberries (I used frozen)

1.  Pre-heat oven to 350.  Mash your banana.  Then, add in yogurt, sugar, and milk.

2. In a separate bowl, add all dry ingredients.

3. Slowly stir wet into dry.  Batter will be thick.  Fold in blueberries.

4. Pour into greased muffin tins.

5. Bake 25-30 minutes.  Check with a toothpick to test to see if they are done.

**I have not tested these with other flours.  Buckwheat absorbs a lot of water and does not act like other flours.  Exchange at your own risk.  :)

Oh So Delicous

Do you have a company that you just LOVE?

SoDelicious has been that company for me since my college years.  I wasn’t able to have dairy, and so their soymilk ice cream saved me!  I can’t tell you how many tubs of that stuff I downed in college.  Their chocolate peanut butter soy ice cream used to be my favorite.

A month ago, (sorry it has taken me so long!!!) SoDelicous generously sent me a love package for me to review their new Almond Plus Almond Milk.  Plus, they gave me free coupons to try out their almond milk ice cream and their yogurts!

I fell in love with this company all over again!

As soon as we got back from vacation, life went nuts.  So, I didn’t get to try out the products as fast as I would have liked.  I decided to wait to post this review until I had tried more of the products and could give an honest review.  What a sacrifice.  :)

I love the new Almond Plus Almond Milk!  I will say though that I got a quart of it in Tennessee, and I didn’t care for the unsweetened version as much as I love the original and vanilla!  I think that since it has protein powder in it, it needs that extra sweetener.

It was perfect in the mornings in my oats and in smoothies!  Plus, one cup has 5g of protein!

Free tip:  Make sure you shake the almond milk before you use it every time or else the protein will settle at the bottom and you will not like your last cup of milk!  :)

As I said before, I knew I loved their soy ice cream, but I was ecstatic to try their coconut milk ice cream and the new almond milk ice cream!

The verdict:  LOVE.

I think I prefer the coconut milk ice cream to the almond milk because it seems more creamy and rich.  Plus, it has no added sugar.  Don’t worry, it is plenty sweet!

However, they are both so different that they will both be in stock in my freezer!  I really want to try the other flavors, but I thought that vanilla was a good one to start with.  :)  I wish the cookie dough was gluten free!!

The cookie dough is gluten free… I meant to say the cookies n’ cream!  Doh!

The third item I sampled was the Coconut Milk Greek Style Yogurt.  I tried the blueberry and the vanilla.

They were both fantastic, but they didn’t have much protein in them.  They were both super creamy and made a perfect snack!  I ate them both with fruit and granola in them.  The vanilla made some really awesome muffins though!

I am dying to try the Almond Milk Greek Yogurt, because it has protein in it!  However, I have yet to find it around me.  When I do though, I’ll be stocking up.
