Luvy Approved

I am pooped after traveling this week!

Last night, we went to the Michael W. Smith concert with the 9:35 worship band at the Kentucky Center for the Performing Arts.

Luvy put this together for the band’s Christmas party.  It was FREEZING last night, but worth braving the cold for!

The music was absolutely beautiful!  It was so soothing and relaxing being there.  I saw signs for the Nutcracker and dropped subtle hints.  😉

We need to go to more shows!  Luvy was in heaven.  He is a musician, and he loves the performing arts.  This was for sure Luvy approved.

Today, we had a busy, busy day.  Luvy had lots to do at the church.  After, we took a run to Whole Foods to pick up some essentials.  Just so you know, it is cheaper to buy things in bulk there!  I bought a case of 365 Unsweetened Almond milk for close to $3 cheaper than if I bought them all separately.  I go through the almond milk!

Today, I added in blueberries, so I had to think of something for dinner.  I had run across a recipe for Zucchini Chickpea Pancakes a while ago over at Just Hungry.  Of course, I modified it to be LEAP friendly.

Zucchini Chickpea Pancakes

  • 4 cups of shredded Zucchini
  • 1 cup Chickpea flour (Garbanzo bean flour)
  • fresh basil
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 1/2 tsp ginger
  • 1/2 tsp mustard powder
  • 1 tsp salt
  • 1 tsp black pepper
  • oil for cooking

Finely shred the zucchini- I used a food processor.

Chop basil and add to zucchini in a large bowl.  (or tear with your fingers!)

Stir seasonings into chickpea flour and add to zucchini.

Stir well.  There should be enough moisture from zucchini to turn this into a batter.  If not, add just a little bit of water.

Heat a small skillet over medium heat.  Add oil and spread around skillet.  Add half of batter and cook for about 5 minutes.  Flip and cook another 5 or so minutes.  You can check the center to make sure the pancake is cooked through.

Add other half of batter and repeat cooking process.

Cut into wedges and serve!

What are your favorite shows or best memories with the performing arts? Mine is for sure seeing Phantom on Broadway with Luvy.  But then again, Luvy makes everything special.  🙂
