Happy as a Lark

Tonight I am just that.

I turned in my paper, did my presentation, and am now finished for the semester!  🙂

Even more exciting, I was in class and at about 6pm I got a text with this in it:

Laura Danielle was born December 1, 2010 at 6pm.  She is 21 inches long and 9 lbs and 1 oz.

I can’t wait to hold her!!  Congrats Jennifer and Matt.  We love you!

Don’t think I forgot about the recipe I promised.  😉

Perfect Whole Wheat Pizza Dough

  • 1 1/4 cups whole wheat flour
  • 3/4 cups all-purpose unbleached flour
  • 1/2 tsp salt
  • 1 packet quick rising yeast (2 1/4 tsp)
  • 3/4 cup hot water
  • 1 tsp olive oil
  • 1tsp honey
  • optional:  parsley, oregano, or basil (or a mix)

Combine hot water, yeast, olive oil, and honey.  Stir and let sit for 5 or so minutes.

Combine rest of ingredients in a large bowl.

After yeast is activated, slowly stir into flour mixture.  Knead well.  

Place in an oiled bowl in a warm place for about one hour.  The microwave is a great place for this– just don’t turn it on!

Preheat oven to 500° F.  If using a pizza stone- let it preheat with oven.

Now is a good time to chop those veggies and prepare toppings!

Roll out pizza crust and top with toppings of your choice.

I used:

  • homemade broccoli pesto
  • leek
  • fresh basil
  • mushrooms
  • chickpeas
  • olives
  • salt and peppa

I would highly recommend using tomato sauce too on this crust.  An old fav of mine and Luvy’s is tomato sauce with spinach, onion, Tofurky italian sausages, mushrooms, peppers, sundried tomatoes, Daiya cheese, salt and pepper.
