Pancake Sunday

Hey friends!  🙂

It was a cold Sunday.  I didn’t want to get out today!!  I wanted to sleep in and have a pancake Sunday, but church called!

After church, Luvy and I came home and grabbed lunch.  We had some cleaning to do this afternoon.  

My tummy still is irritated and sore from my mole removal, so Luvy did 90% of all the work!

Some banana nut bread was made.

Football was watched with the Christmas lights on.  Peyton didn’t pull through for us again.  What’s up buddy???  Interceptions don’t make Luv and Luvy happy.

Peyton may have lost, but tonight was great because tonight was pancake night!  We missed two great mornings to have pancakes, so we took advantage tonight!!

We had buckwheat pancakes.  If you have never had buckwheat pancakes, you must go make them now!!

Buckwheat Pancakes

  • 3/4 cup of Buckwheat
  • 1/2 cup whole wheat pastry flour
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 Tbsp of honey
  • 1 Tbsp of apple sauce
  • 1 1/2 cups of water or almond milk

Mix ingredients and let sit for 5 minutes.  Cook on a preheated grill or pan at 375°F.

Topped with almond butter, banana, mango, and maple syrup.  Plus a side of veggie egg white scramble.

Just what I have been craving all weekend.

Now it’s back to work tomorrow…  booger.
