Yucky Days = Comfort Food

Today was a rainy/ yucky day.  The morning was spent cleaning the house, hangin’ with Shaun T and the Insanity crew, and going to Dick’s and Walmart.

Luvy and I are on the hunt for new winter coats.  It is FREEZING up here, and Luvy doesn’t have a warm coat.  Any suggestions???

We think we have found a Columbia one, but we need to find it in a store for him to try it on.  We may have to make a trip to good ol’ Bass Pro.

Walmart was like a mad house.  There is talk that we might get… *gasp* snow tomorrow, so the majority of Louisville was there preparing for dooms day.  🙂

Tonight’s dinner was another comfort food meal.  This cold weather makes me throw out my salad love and head straight for the hot comfy foods.

Vegan Veggie Biscuit Casserole

  • 1 leek (or 1 white or yellow onion)
  • 3 garlic cloves
  • 1 medium sweet potato chopped
  • 3 cups frozen vegetables (I used green beans and corn)
  • 1 bag of frozen broccoli and cauliflower
  • 1/4 block of tofu or 3/4 cup of cooked chickpeas
  • 2 Tbsp hummus
  • 2 Tbsp flour
  • 1 cup water or veggie broth
  • 1/2 cup non-dairy milk
  • 1 tsp cumin
  • 1 tsp basil
  • salt and pepper

Preheat oven to 375°.

Sautee leek (onion) and garlic in a large sauce pan until tender.  I used the steam method and added 1/4 cup of water, but feel free to use olive oil.  Next, add vegetables until tender.

Add in chickpeas or tofu, water or broth, milk, hummus, flour, and seasonings.

Cook covered for 5-10 minutes to allow to thicken.

Pour into a casserole dish and top with biscuits.  You can use Bisquick biscuit mix, your favorite biscuit mix, or the one below.

Cover with foil and cook for 35-40 minutes.

Let stand for 10 minutes to set before cutting.  Or not…. 🙂

Yummy Vegan Biscuits

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 banana
  • 2 tsp baking powder (I used 1/4 tsp baking soda to keep LEAP friendly)
  • 1/4 cup water or non-dairy milk
  • 1/4 tsp salt
  • 2 tsp honey or agave nectar

Blend flour, baking powder, salt, and banana until pebble like.

Add milk and honey.  Stir until well combined.

Shape into as many biscuits as needed- I do 12.

Place on top of vegetable casserole.

This hit the spot tonight!!

Luvy came home with a movie from redbox….  off to the couch!

Tomorrow I’m making my first attempt at bread in my bread machine… stay tuned.

Has anyone every done Insanity workouts?  What workout DVD’s do you like? I’m on my second month of Insanity and I LOVE it!
