Before I met Luvy, I had never even had Mexican. My diet was boring and BLAH! He introduced me to Mexican, Indian, and all kinds of other exciting flavors and foods. Now, I am a self-proclaimed foodie. I love food. I love to smell it, taste it, and explore.
For the first time since the Leap diet, I made a favorite of ours… Jambalaya.
I adapted my recipe from the wonderful Mama Pea. I can not wait for her book to come out! I will be one busy kitchen bee when it does!
Jambalaya (adapted from Mama Pea)
- 2 seitan links
- 1/2 bell pepper (I used red and green)
- 1 leek
- 2 garlic cloves
- 1 jalapeno
- 1 tsp basil
- 1/2 tsp dill
- 1/2 tsp cumin
- 1 can fire roasted tomatoes
- 1 cup water
- 2 cups cooked brown rice
- 1 1/2 Tbsp tomato paste
- salt and pepper to taste
Season to taste.
It was so good… we ate it all! 🙂 Oopsy…
