Rajun’ Cajun

Before I met Luvy, I had never even had Mexican.  My diet was boring and BLAH!  He introduced me to Mexican, Indian, and all kinds of other exciting flavors and foods.  Now, I am a self-proclaimed foodie.  I love food.  I love to smell it, taste it, and explore.

For the first time since the Leap diet, I made a favorite of ours… Jambalaya.

I adapted my recipe from the wonderful Mama Pea.  I can not wait for her book to come out!  I will be one busy kitchen bee when it does!

Jambalaya (adapted from Mama Pea)

  • 2 seitan links
  • 1/2 bell pepper (I used red and green)
  • 1 leek
  • 2 garlic cloves
  • 1 jalapeno
  • 1 tsp basil
  • 1/2 tsp dill
  • 1/2 tsp cumin
  • 1 can fire roasted tomatoes
  • 1 cup water
  • 2 cups cooked brown rice
  • 1 1/2 Tbsp tomato paste
  • salt and pepper to taste

Start by sautéing the seitan in a large pan until starting to brown.

Add in pepper and leek until tender.

Next, add spices, garlic, and jalapeno and let cook for about 1 minute.  Stir in tomatoes and water.  Bring to a simmer, cover, and lower heat.  Allow this to simmer for 10 minutes.

Add in rice and tomato paste and cook for an additional 10 minutes.

Season to taste.

It was so good… we ate it all!  🙂  Oopsy…
