Can you believe it??

Okay, so.. my big news…

It’s actually not all that big.  A while back I talked about my Vegan/Vegetarian Dilemma.  I have just been feeling like something was missing in my diet.

After reading Gina’s blog and how she reintroduced chicken, my mind began to churn.  I eat egg whites, but I haven’t eaten chicken since early in college.  In fact, it has been over 5 years since I have had it!

After setting aside my pride of being a “vegan”, I tried chicken.

I know… pass out in the floor right?!?!?  I tried very hard to have an open mind and tell myself that I was going to like it.

We got cage free and antibiotic free chicken from Whole Foods, so that made me feel a little better.  Unfortunately, my suspicions were true… I just don’t like the taste of chicken.  I am going to give it one more shot, but next time I’m going to marinate our chicken in something overnight.  Maybe that will help??

My family has an AMAZING BBQ recipe.  The barbecue sauce will change your life… seriously.

Daddy taught Luvy how to roast the pork loin.  He did a great job!  

I can’t STAND the smell of pork – especially bacon.  YECK!

Trying to be a good sport, I believe it or not tried the pork barbecue!  It actually was better than the chicken, because I couldn’t taste the pork at all for the sauce.

Can you believe that I tried two different meats in a week time period??  I’m actually very proud of myself for giving it a shot.

I have realized that my body just feels better with just fish, egg whites, and vegetables sources of protein.  I can’t say that every now and then I won’t try meat, but I am no longer labeling myself as a “vegan” or “vegetarian” per say.

I body just feels slow and sluggish when I eat meat.  Instead of eating faux meats and protein supplements, I’m trying to eat REAL FOOD, but meat doesn’t seem to agree with me.

Do any of you have this problem??

Royal Hiney

It is COLD this weekend!  I was hoping to do more stuff with Daddy outside, but it was way too cold for that.

We made an oatmeal breakfast and then ventured out.

Daddy had never seen Churchill Downs, so we took him by UofL where I go to school and then to the track.

Lots of betting going on today.  Don’t worry, we were good.  🙂

I have my Daddy’s luck anyway… I know better than to bet on anything.  🙂

While we were looking at the track, one of the workers offered to take us upstairs to Millionaire’s Row.

He let me sit in the seat that Queen Elizabeth II sat in when she came the derby.  My hiney is now royal.  🙂

Daddy and our guide had a great time chatting.  This guy was a womanizer.  He likes his pickup lines!

They have a really cool glass representation of the Derby on display up on Millionaire’s Row.  It was handcrafted by an Englishman.  It can be yours for just 3 million dollars.  I made sure not to get too close!

On our way home, we stopped and got Girl Scout cookies from Jordyn, and I scored these awesome mini bananas!!

I can’t wait for spring.  Our fruit hasn’t been very good.  I got peaches the other day and one was soft and powdery and the other was hard and dry.  😦  Need sun, heat, and FRUIT!  Florida anyone??

We came back and Daddy showed Luvy how to make our family’s famous Pork BBQ.  More on that later.

It is so nice having Daddy here!!!

We have to roll up our sleeves and get ready for our chili cook-off at church tomorrow.  I think they are prejudice against my vegetarian chili… I never win.  Here goes another year… MEAT FREE!

Busy busy bees

It’s official. We are crazy busy people. Period.

Last night, Luvy and I needed some R&R, so I took a blog break. I love blogging, but I don’t want to feel obligated. Plus, I’m really not that exciting and so I don’t want to bore you with my rattling on about nothing. 🙂 (Even though I am guilty of this a lot!!)

Thursdays are my late night, so Luvy cooked us dinner tonight. 🙂 Love him. We are busy bees now trying to get ready for Daddy to come visit tomorrow!!!!!

He will be here for the weekend. Don’t worry, I will be posting all the fun shenanigans we get into. Also, I have some new recipes to share!!

I made the BEST pizza the other night.  For those of you who can’t have cheese, you MUST try Daiya cheese.  I got mine at Whole Foods.  It has a great texture and taste.  It was even Luvy approved- and he LOVES cheese.

It is great for those with allergies.  It is dairy-free, gluten-free, soy-free, and free from peanut and other tree nuts.

Another great thing is that it melts!!  I loved the mozzarella on our pizza.  I have been using the cheddar on chili and my egg whites!

It is to die for!!  Especially on my whole wheat pizza crust.  The only change that I made was that I used whole wheat pastry flour in place of the whole wheat flour.  It made it much better!  The toppings included:  WF brand traditional pasta sauce, spinach, mushrooms, olives, artichokes, red onion, and Daiya cheese!!  I was in food heaven!
