The Brittany Monster

Sorry for going MIA on you all this weekend.  I just needed a break.

Luvy and I are “trying” to relax more and make it a priority to just set things aside and rest.  This weekend I discovered that I’m not a good relaxer.

Let’s start with Saturday, shall we?

We decided to turn off all alarms and just sleep in.  So, we did, and I slept until 8:30!  However, there were several things I needed to get done on Saturday.  Plus, Luvy and I wanted to “rest”.  So, the mad dash began.  I started scrubbing bathrooms while Luvy vacuumed and dusted.  He even mopped our floors.

I was already beginning to stress out when 10am rolled around, and we hadn’t eaten breakfast.  Plus, I still needed to make bread and so on and so on…  You can see where this is headed…

Saturday morning the Brittany Monster came out and it wasn’t a “relaxing” morning AT ALL!  Thankfully, I have a wonderful husband who is very gracious and puts up with my Brittany Monster.

My mental health and stress levels were not on the healthy scale on Saturday.  I have a flat in the mental part of my health wheel.

I have a confession to make, I struggle with stress.  When things start to pile up, I freak out.  My husband knows this about me, and he is VERY good at taking things off my shoulders.  However, I am going to be making some changes to lessen my stress, because, let’s face it, no one likes the Brittany Monster.

Being in the kitchen seems to destress me.  So, Saturday night I made a recipe that I had seen on Kath’s blog ages ago but never had the chance to try out until now.  It took about 15 minutes to prepare, no joke!!

It was greens and mac.  The recipe can be found here.

It looks like green goo, but it was delicious!!  

The sauce was a combination of butternut squash puree, mushrooms, garlic, mixed greens, salt, pepper, red pepper flakes, nutmeg, and my favorite, Daiya cheese!

It was very filling.

It felt good to cook and try something new in the kitchen.  After that, I was ready to relax with Luvy and have a Bones marathon!
