A Meal in 5

So, Thursdays are super busy.  I work until 7pm.

Many times Luvy and I are pushed for time, so we need meals that are quick.

This is one of my favorite 5 minute meals.

If your life is hectic like ours… this is a LIFESAVER.  I got this idea from Kath over at Kath Eat’s.  Her food is to die for!

5 Minute Tex-Mex

  • one bag of frozen okra
  • 1 cup frozen corn
  • 1 can of beans (I used pinto)
  • handful of spinach
  • opt- chopped mushrooms, onion

Throw all ingredients in an oiled skillet.  Add a little bit of water to get it cooking.  Add in some cumin, garlic powder, and chili powder.  Stir until cooked through.

Top with salsa, nutritional yeast, cheese, corn chips… or whatever you are feeling!

This is so fast and SOOO good!

And I’m off…  early morning tomorrow! I’m so in need of a relaxing weekend…  Maybe in April??

    BTW, JDT has absolutely nothing to do for a while now – tell him his cohort said he is in charge of Thursdays (at least until May) :).
