To the Moon and Back

Luvy and I spent the BEAUTIFUL day today in Louisville.

This morning we went to an awesome spin class.  After we were drenched in sweat, we came home to wash up.

After we got squeaky clean, we headed back to Louisville.

Our first stop was at World Market.  Luvy and I love their things.  Remember we got our cute soup bowls and Slap Ya Mama seasoning there a couple weeks ago??

Today we got a steal!!!  Since I have all my food issues and allergies, I am constantly traveling with food.  We just so happened upon two great totes that are insulated.

They were marked half price!!!  I couldn’t pass these two up!  These are going to make our travels much easier!

I also got some Chinese 5 Spice and a vegetable scrubber.  Gotta get those veggies clean!

The best part about it was that I had a $10 off coupon PLUS 10% off.  So, we ended up getting everything for only $11!!!!  The one large basket is regularly $19.99.  I think we made out pretty well!

After our shopping escapades, Luvy took me on a date.  I am going to have to give up soy, peppers, and sweet potatoes again because I have been having some bad reactions.  Before I had to do so, we wanted to go out to eat one more time.

He took me to one of our favorite Louisville restaurants, August Moon.  It is a Chinese bistro with a Malaysian influence.  The food is always VERY good.  Plus they have the most amazing tea.

We always get the Jasmine tea, but tonight we tried the ginger ginseng tea.  Luvy and I both loved it.

For dinner, I got the sautéed vegetables with tofu and spicy basil sauce.

It had some really cute little mushrooms in there.  They were so careful to make sure there were no cabbage or carrots in there!

I liked it pretty well.  It was very sweet- I couldn’t eat that much of the sauce.

Luvy got the hot + spicy shrimp and vegetables.  He loved his as well.

We had a great and relaxing dinner for the first 2/3 of the dinner.  Unfortunately, Mr. Grumpy Gills was seated beside us.

Have you ever been happy that you didn’t know someone…or that they didn’t know you??

Tonight, we were.  Mr. GG was talking bad about EVERYONE.  We stopped counting how many people he was complaining about after it got into the double digits.  He was also upset when his ‘first’ was too big!  Who complains about getting too much food????  Geeze..  He gave us a good laugh!

August Moon was just a great as we remembered, and they were extremely accommodating to my allergies.  We will definitely be back!

Flash Back

AHH! It’s back. I have felt naked all week without my camera.

I love taking pictures and sharing them with you all.  Usually, I always have my camera on me for just-in-case.  Most of the time I forget to take pictures, but it just feels better knowing I have the camera.

Now that I have the camera back, I can share last weekend with you all!

Friday, we went up to Luvy’s grandparents house.  We all hung out southern style on the front porch and sang hymns together.

Since my brother-in-law Matt is in Iraq, Jennifer brought little Laura to see us.

They have the most beautiful children!

I am so blessed to be their Aunt!

Every time we come down, we try to meet up with our friends Ben and April and their little guy, Rush.

We really miss having them around.  Luvy has been friends with Ben since they were little.

April and I met our freshman year of college and have been friends ever since.

Rush sure wanted some of those almonds!

I try to take one of April’s classes when we come to visit.  She teaches exercise classes at the Community Center.  Saturday morning, I took her Zumba class.  That girl knows how to shake it!

I think she is the best instructor, so no other class ever measures up to hers!

Before we headed back to Kentucky, my dad and brother met up with Luvy’s parents and us to eat at Ruby Tuesday’s.  We love Ruby’s because everyone can eat there!

We also made a trip to Earth Fare.  I love Whole Foods, but I sure miss Earth Fare.  They send out weekly deals and coupons for something free with a $5 purchase.  I gave coupons to my dad and Luvy’s parents for free cage free eggs!

It was great seeing family and friends.  Our time in Tennessee always seems so short!

How to Healthify Pizza

We love pizza around here.

Take out pizza is full of grease, fat, and highly processed foods.  Franken-foods as I like to call them.

I’m not saying to never eat out again or grab a pizza on the go!  However, homemade pizza is MUCH more healthy and flavorful, and it doesn’t take long to throw together.

Usually, I use my wheat pizza crust for my pizzas.  I also like using polenta as a crust base.

Toppings is where we usually get in trouble on our pizzas as far as nutrition goes.  All that oil based cheese and processed meat is not good for the body!  Plus, the red sauce that most places use is packed full of sugar!

Here are some simple ideas of how to healthify your person pizza!  Plus, they are good tips for eating out!

For the base:

  • Pesto- has good fats and is delicious!
  • Red sauce- look for some with no added sugar or low sugar.  I use 365 brand.
  • Hummus
  • Barbecue sauce
For veggies:
  • Spinach
  • Kale
  • Bell Peppers
  • Tomatoes
  • Sundried tomatoes
  • Jalapenos
  • Mushrooms
  • Artichokes
  • Onion
  • Pineapple
  • Banana Peppers
  • Corn
  • The options are endless here!
Healthy Protein:
  • Diced grilled chicken (antibiotic free and hormone free)
  • Lean sausage chopped
  • Seitan
  • Tofu
  • Cooked beans
  • Tempeh
Healthy Fats:
  • Avocado
  • Olives
  • Cheese (I use Daiya dairy free and soy free)
  • Fresh or dried basil, parsley, oregano
  • Chopped garlic
  • Dried red pepper
  • Salt and pepper
As you can see, pizza options are endless!  Don’t be afraid to try out new combinations.  Go crazy!
I love taking meals that aren’t always deemed “healthy” by society and making them more healthy.
If we constantly deny ourselves these “unhealthy” foods, we will end up feeling guilty every time we eat them.  Thus, we will have a negative attitude when it comes to food.
