Eating healthy on the go

One assignment down, 4 to go!  Yikes!  However, I am going to relish in the fact that I have completed one rather than dwelling on the 4 left to go.  Right??

Luvy has been a rockstar and has been helping out in the kitchen as much as possible.  We have been eating super simple and quick things so that I can focus on school.  Things like jambalaya, rice and beans, and stir fry.

Instead of making homemade seitan for my jamabalya, I used Tofurky Italian Sausages.  Field Roast is another favorite, but that would have required forethought and a trip to Whole Foods.

Other eats have been eggs or tofu, vegetables, and toast, leftovers, or soup that I have previously made and frozen.

You can eat healthy even when you are in a time pinch.  Any of these meals are super quick.  Soups can be frozen and reheated in times when you are in a pinch.  Also, don’t forget to dust off those crock pots and slow cook some beans or soups.  You dump everything in and come home to a home cooked meal.  Like tonight’s split pea soup!  Recipe to come!

With just a little planning, a few cans of beans, some frozen veggies, and a whole grain, you can make a quick, healthy, and super cheap meal in minutes!  It will spare you the money and extra calories and fat of eating fast food.  Plus, you know what is in your food!  Also, by combining beans with a whole grain, you are getting a complete protein.  No need for cooking up any meat!

When we fuel our bodies right, we function at a higher capacity than if we eat fast food or junk foods.

Even when you are in a pinch for time, don’t skip meals!  This will crash your metabolism and make you more lethargic.  It will put your body in more stress and you will not function at your best.

If your body is telling you it is hungry, eat!  Grab a piece of fruit with some peanut butter or almond butter.  Or you can grab a healthy snack bar.  My favorites are Cliff bars, Luna bars, Pure bars, or Cascadian Farms Pumpkin Spice granola bars!
